Nobody in Peru eats raw maca for the same reasons "Westerners" don't eat raw potato. Our techniques ensure that the bio-availability of nutrients in our maca powder is 99.6%. The nutrition of our maca powders is as close to raw nutrition as you can get, without the poor absorption, digestive upset and/or illness that could come with eating raw food.
